Will be thinning the flock this weekend to get rid of some of the males and make room for the new chicks. I've processed chickens before and I'm guessing quail are done pretty much the same way.  Any suggestions or advice would be appreciated.

Got some recipes lined up but having a hard time deciding whether to marinate, bar-b-q, or saute...decisions, decisions...

AFTER YOU PULL OF THE HEAD, CLIP THE FEET AT THE DRUMSTICK. USE A SMALL SHARP KNIFE TO CUT THROUGH THE PINCHED SKIN BEHIND THE WINGS.  THIS MAKES IT EASY TO SKIN THE REST OF THE BIRD.

how do you gut them? Split the back our justcut around the tail-hole and pull it all out through there like a butterball turkey?
Does anyone have a link about it?

WE CUT OFF THE TAIL, THEN JUST BELOW THE END OF THE TAIL(BREAST SIDE),PUNCTURE THE SKIN THROUGH BOTH SIDES AND SLIDE THE EDGE OF THE KNIFE UP.
CUT THE SKIN AROUND THE TAIL HOLE.
SLICE THE SKIN ON BOTH SIDES BEWEEN THE BREAST AND THE BACK.
REACH IN AND GUT IT.
I USE A SMALL PARING KNIFE, BECAUSE YOU WANT TO GET THE LUNGS AND THE AIR TUBE OUT AFTER YOU GUT IT.
THERE IS  A VEIN YOU CAN PULL IN THE BACK TO HELP MAKE THE CLEANING EASIER.
I HOPE THIS HELPS.  I'M LEARNING, AND IT TAKES ME 2 HOURS TO DO 3 DOZEN.
