Hey Guys,
3 weeks ago was Thanksgiving, now its time for the big holiday, does anybody know what their making during the christmas/holiday season or on Christmas ?  I started figuring out some of the things i wanted to make for Christmas the Monday after thanksgiving.  Today i just made this Italian cake called Pandoro (if anybody was interested in knowing what its called) its very labor-intensive it takes a total of about 8 to 9 hours devoted to rising the dough.  But this long amount of time gives the dough a great fuller flavor and i personally think its worth it. A lot of time and patience is needed for Pandoro.  I have other things I'll be making as well, i like making Christmas foods during December not just on Christmas day then thats it till next Christmas.

Hold them over a barrel of burning kitchen chairs and they'll have a nice smoke flavor !

Used to do that all the time when I was a kid with homemade ketchup that was put in re-used pop bottles.

LOL! Don't be giving birdlover any ideas to use out on the deck, might catch fire and kill all the birds!

If I can hold out a couple months, my new maid will be cooking with our free GI solar powered, wind drivin' hydrogen oxidizing cooker that Hussein promised...............although I probably won't qualify for a number of given reasons.    s16

Here's my Christmas Menu   c181                                                                                                                     c181

Christmas Eve (fish night): No meat is traditionally eaten on this night, not even a speck.

-Stuffed Calamari (squid)
-Sauteed broccoli raab
-Cabbage, Potatoes and this type of salted fish called cod or Bacaloa in italian
-Octupus...trust me its good
-Clams, mussels, and shrimp cooked in a tomato sauce with herbs and a few other ingredients.
and other things that i have to decide if i'll make or not...

opps i forgot dessert ....    i'll probably make a panettone cake, italian torrone (its like a candy with nuts really good) or some kind of italian christmas dessert.

Now's Christmas Day (meats allowed s020)

-Roasted Turkey with potatoes (i know made that for thanksgiving but i enjoyed it so much i promised myself to make one for christmas, hey its mentioned in The Christmas Song.
-Green Bean casserole
-a nice Salad
 

thats what i have so far i will add some more stuff this week.

Well for stuffing a squid you have to clean the inside of the squid, then remove this plastic looking thing that looks like a pen, and stuff it with whatever you like, i'm stuffing mine with breadcrumbs, garlic, herbs those things, then you take two toothpicks to secure the ends so they dont burst and allow the stuffing to come out, i had it one time while in italy a while back, i can still taste it.

I make Cumi Cumi Isi for my KP now & again, which is Squid stuffed with minced Snapper in sauce of shallots, Thai Chili's, Lemon Grass & coconut milk ..... I don't eat mind cos' .... it looks gross (http://img.photobucket.com/albums/v285/seesaw/icon_sick.gif).   

KP & the also kids like Aussie BBQ'd Baby Octopus marinated in Chili, Garlic & white wine, but I refuse to handle the ugly little suckers !!!

Here is a novel way to prepare your Christmas Turkey.

 
1. Cut out aluminium foil in desired shapes.

 
2. Arrange the turkey in the roasting pan, position the foil carefully. (see attached  picture for details)


3. Roast according to your own recipe and serve.

 
4. Watch your guests' faces...

Yeah i know i can't wait for christmas dinner, i'm trying to eat a little less so that i'll be ready for the big day. Yeah i like the octupus boiled then added with olive oil over the top, but i bet braised would be good too especially with that red wine. A crown of pork sounds great, i might make pork for new years. 
Does everyone have their Christmas Menu's ready to go?

  Shouldn't pick at you over such a meaningless thing, but I think your lack of experience may have misled you, here.

  Wouldn't it be better to cram with anything you can get your paws on up until 24 hours before the big feed?  Stretch your stomach, then fast for 18-24 hours, just before diving in?  Going into the main event with a stomach the size of a walnut might hinder your work.

  I'm not sure about this, but that's my plan.

no wilder your right, wouldn't be such a great idea to stopping eat a lot for a few days then gorge yourself with food.
I just read this article that during holidays or fesitivies the chances of a heart attack increase 1 to 3 hours after a big feast.

  That might depend a lot on one's specific relatives attending the event. lol

  Local heart surgeons, here, commented on that.  They said studies were inconclusive, but that all the ingredients were there.  Holiday stress from shopping, budgeting, and travel probably contribute as much, or more.  then Adrenalin crash, shallow breathing.

  Personally, I train year 'round.  Gluttony, is no sport for amateurs!

no reeves i'm not worried of a heart atack i just thought i'd mention it.  Yes i know i should be able to eat like anything and it not bother me, but for the most part i eat good food especially with christmas almost here.  I especiallly love exotic fruits, that probably explains why i like gardening and want to become a chef with a passion for food.

Well i grow lots of kind, the basil,rosemary, parsley,lemon verbena, bay, spearmint, sage, oregano, thyme, lavender, and i expect to grow other kinds next year i really want to try tarrogan, pineapple mint, marojam, and others.  I have the bay, rosemary, and lemon verbena indoors since their not hardy where i live. I mostly have them outdoors. Your lucky that your climate allows the herbs to be grown outdoors without a hardiness problem.  Yep i know that sage has that pinkisk flowers.

awww comev on slider aint nuthin wrong with a heman growin fresh sage to rub on a deer carcass before he roasts it  j45 its important  to know yer spices honey even budweiser is a spice  aint you ever made a beercan chicken on the barby ...try wrapping some whole fresh sage in wth pine apple basil with a deer  or wild boar roast wrap in foil cook in a smokwer mmmmmm p33

Glad your christmas was good.  For the new years menu there are foods that are suppose to bring good luck or allow the new year to be prosper.  I'm thinking about doing roast pig (i wish i could get a whole pig but i have to work with pieces of pork like the thigh, leg, etc..)  also a dish with lentils, greens like collard greens or kale, cakes, maybe baked clams and fish, etcc    Also plenty of Champagne.

Since there are good luck foods, there are also bad luck foods that you shouldn't eat like dont make any poultry or lobster they dont represent anything good but bad for the new year.

If you can, there are pig farmers that may sell a pig-let for a traditional feast. I'm not that superstitious but I can respect it.

New years meals are usually pretty simple affairs in Scotland.  

On Hogmanay (New years Eve) our main meal will be Stovies a traditional Scottish dish made with left over roast beef & sliced tatties, served with oatcakes & baby beetroot and loads of booze, then we're off to a party for the bells.

On New Years Day I'll likely be feeling like death heated up so I'll be keeping the cooking really easy, we'll be having broth made the day before followed by Roast silverside, Yorkshire puddings & trimmings and probably strawberry & kiwi pavlova for dessert.

Well I am breaking ranks, I have had a bad luck streak so far this last 4 months, I am doing Breaded Chicken Cutlets, and Stuffed Rolled Chicken Cutlets wrapped in Peppered Bacon.

For New Years we'll be having a deer roast from one of the 3 deers my son has gotten so far this year.

thanks steve ive done all of the above and i mainly do  canvases 3by 5 and up ...i also reproduce some masters  turner is my favorite ...lol when i have time one master took me 6 wks my former pastor has it hanging in his office... im currently working on a pioneer scene ..wall mural in my living rm and a rainforest/waterfall scene in my bath ...on my good days ive been working on it off and on for 3 yrs

Hey bobhunter,
well i made roasted pig, southern collard greens, lentils as a side dish. The majority of foods that i made or will make later are lucky foods/ will bring success for the new year. Later for dinner i plan to make other dishes as well.Yes i'm still in cooking school i'll be done by the 1st week of May 2009.

I've been (unlucky) enough to supervise a good number of crews.
The highest number of "released" (fired!) were those with College and University degrees !
No common sense or good work ethics. Not even the slightest idea how to use a tool as simple as a shovel !

I know, most go to school thinking they'll be able to start at the top.
A few do ( and make a royal mess of things) and the rest go to work at the bottom....only to provide comedic events for those whom know how to work.

Makes one wonder how the world got this far, with having to go through this.

well you have to sauteed pieces of pork hocks with onions, to give it a nice flavor and i added some pepper and salt then you have to add some water cooking the collard greens, at the end you dont want to be left with any liquid, the water should completely evaporate.
I got to say ode, that vinegar is a great idea, i'll have to try that next time.

Word is around here, hunting dogs don't get lost.  Hunter loose their dogs.  If you take a dog out hunting, he will return to the place where he was dropped off.  If you move the truck  to go looking for him ater awhile, he will try to track the scent of the truck.  Hunting dogs don't work on the hunter's time schedule!
