  I want to pickle Quail Eggs...but I can't seem to find a simple way to remove the shells w/o tearing the egg...Does anyone have a method?

Put them in cold water as soon as they come out of the boiler
You have to peel them before the inside completely cools or it won't work right
Causes a moisture barrier the shell should peel right off

Let the eggs cool after they have boiled, drain the water off the eggs, and cover eggs with straight vinegar.  Let the eggs set for 4-8 hours, rinse well, and all you will have left is the membrane, no shells.

This works, but I find the eggs to be really rubbery.  But I left them in the vinegar over night.

I put some baking soda in the water when I boil them (supposedly changes the pH.)  Then ice water after boiling.  Not many tear.  It's still pretty tedious though.
