I have just pickled my first few jars of quail eggs.  I have been reading about a water bath so the eggs do not turn brown.  How do you do this?  I am definetly not Miss Betty Homemaker, but I have been asked to pickle these eggs to sell, and I don't want them to turn brown.  So I need help. Also, does anyone know if I need to purchase some kind of license to sell these pickled quail eggs.  Please reply.

Most likely you will need a liscense if you are going to sell them. if your going to sell them to a few friends and not go bigger scale I wouln't worry about a liscense.

I would hope you are just selling to friends because of the sanitation issues.
A hot water bath is 15 to 25 minutes of continous hard rolling boil, but you also must make sure your jars are sterileized and lids and so forth. The eggs will not turn brown but they will putrify quickly if any bacteria is present and then you are in for a world of hurt. We only make eggs for us and a few close friends who we trust will handle the jars carefully.
