Title: NY regulation for Sellling to restaurants does any one know?

I'm looking to sell quail meat and eggs to restaurants in my area. I know you can sell the meat and eggs to private people with the one license from the state. Does any one know if the quail has to be slaughter at  a NY inspected slaughter house in order for me to sell the meat to the restaurants or can I slaughter them myself. Any info would be great.
