Title: Killing Quail

Can someone tell me what is the best way to kill and butcher Pharaoh quail? Do you pluck or skin them.

I take them in my left hand, upside down with the head hanging between the first and second fingers.  With just a little rocking, they relax and eyes go closed.  I then remove the head quickly with a sharp pair of shears and let them drain.  I then dip them in 135 degree F water for about 10 seconds and wipe the feathers off.  Works pretty slick.  The skin retains the fat and will give you a nice moist bird to eat. The skin is delicate and will tear easily, especially if they are left in the hot water too long.  They are good eating, lots of ways to prepare them.

I skin mine.  Just like peeling off their pajamas. Then I cut the wing and legs at the first joint with those shears like GSC uses. Once you get all the skin off, I cut the oil glands and tail off together (oil glands are on top(?) of the tail) Then I use the shears to cut from the vent to the neck along the spine, this leaves the breast untouched. Scoop out the goodies and throw into a bucket of ice water. All in less than 5 minutes.

Mom adds lemon pepper to them in the freezer bag.

I slit the throats and pluck emmediately after. it's easier when still warm cuz I like the skin etc.

 I can clean about 12 in an hour.  Guess this is best for me
