My dad always just "popped" the heads off.

Soaking them in salt water for a couple hrs. will eliminate the blood in the meat and won't give them a salty taste.

what is the best way in yalls opinion to kill and dress them

  Birdlover has a good method for the first part.

  All meat is full of blood.  Do you mean "bloodshot?  Didn't beat that turkey to death, did you?  Or was it roadkill?

an old farmer gave him to me cause he broke his leg on the railroad tracks ,i hung him upside down by his feet and cut off his head with an axe ...then i let him drain for 30 minutes ..gutted him ,scalded him ,plucked him then baked him in that order we didnt have food in the house ..didnt know what i was doing just did what i figuired was the best way...he definately was scared when i killed him s178

  Ya think?

  I don't know what I would have done different. Maybe trimmed the bloodshot areas off.  But I've been hungry, so I might not have wasted it.  He probably had flopped around and beat himself half dead.  I've cooked 'coon that had been whipped by dogs.  It's rich and red, enough without being bruised up.

  With no other injuries, an axe to the neck and draining, leaves pretty good meat.  Someone may be able to describe the Kosher method.  It's almost as good for Christians, or even atheists.   (The method, not the ceremony).

Kosher a turkey is hanging, cutting the throat with a very sharp knife like a razor blade and bleeding it out well then soaking the carcass in salt water after defeathered and butchered. 

Pretty basic.

Are we talking turkeys or pigeons here, I lost track.

well i started this topic because i have a chance to pick up some birds for free ,pidgeons..but i  want to have a pupose for them so im trying to pick up pointers on how to clean them and which ones are best for eating ...either way i need to know more about cleaning birds in general because i plan to raise some for eating pidgeons or quail...the turkey was the only bird id ever had any true expereince with i watched birds cleaned in the bahamas when i was there with my parents on eluethra a little island by nassau

There is a real good pigeon forum at poultryconnection.com go there you will LOVE it there...I highly recommend it the topics are hot and the replies are quick and friendly. Lots of good stuff you will learn quickly and pigeon raising is a fun and very inexpensive hobby. They are looking for new members daily....
