I am using Hovabators w/turners till the 20th day.
I have water in the trays, use sponges etc, I even spritz with a spray bottle a few times a day & make sure windows are fogged.
As far as actual humity, I have no actualy way to measure.
I guess its kind of a seat of the pants type method.
