I'm looking to raise birds for hunting and dog training - still debating between quail and chukar (will probably try both.)

I figured I would start with a battery style brooder like GQF or Brower.  But I'm unsure how these work.  How do you change out the the water and pull dead chicks without them flying out?  How often do you need to deal with them, and would they stink up a garage?  How to you get the birds out and transport them?

I have an old dog kennel that I could build into a brooding shed.  Would it be better to brood there than in the garage?
