What happens if you put day old quail and pheasant in the same brooder?

I don't know, try it and find out.. I have had dayold pheasant chicks with dayold chicken chicks that hatched the same time in the brooder.

I wouldn't leave the quail chicks in the brooder for no longer then a week though.

I agree with Steve,   I have tried this and for a few days give or take they usually get along.  Then all of a sudden they discover that they're not related.  I also have noticed that a little quail will go up to the pheasant chick thinking he's his brother and would get pecked to death.
