Frank, Here's a link to what looks like a pretty good guinea fowl recipe. What do you think?

Kick 'Em Up - Knock 'Em Down

If you guys and gals like teriyaki, try Veri Veri Teriyaki.  It is by far the best!  The only place I have found it is at the big Super Walmarts in the oriental food location, glass bottle, blue and white label.  There are no comparisons to it.  I marinate venison or pheasant in it for a few hours and then throw the meat on the charcoal grill.  Excellent!

Kick 'Em Up - Knock 'Em Down

Also, a little more complicated recipe that I'm not supposed to make for anyone but my wife, because it is our dish.

Chicken Scarpariello (Good with pheasant, too)

Ingredients

A couple chicken breasts cut in 1" x 1" pieces
Flour
Bread Crumbs
Butter or Oil
Shallots
Garlic
1/2 Cup White Wine
1 Cup Chicken Stock
Rosemary
Salt, Pepper
Fettucine Noodles

Process

1.) Bread Chicken in flour and bread crumbs and fry in butter or oil until done.  Place aside.
2.) In same pan, saute shallots and garlic until soft.  Then add white wine, stock, rosemary, salt, and pepper.  Simmer until fluid is reduced in half.
3.) Return chicken to pan and simmer for a couple minutes.
4.) Serve over fettucine noodles.

I usually mix chicken boullion with milk instead of using stock and add flour to thicken up the sauce.  I also melt in some shredded parmesan cheese so it turns out to be more of a scarparafredo   Also, serve with some rolls and the rest of the bottle of wine.  It doen't take as long as it may sound and is delicious.  Kinda of date night thing.

Thanks, Scuba. Complicated as you say, but sure seems like it would be good!  The wife and I plan to try it within a few days.

Adult Coturnix Male

« Reply #26 on: July 05, 2008, 02:41:19 PM »

Hey,
Hope all you guys had a great 4th of July yesterday, i even decided to make a nice cake to go along with it, here's the recipe and pictures of what my cake looked like:

Simple White Cake:

INGREDIENTS
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
