:roll:   Has anyone ever pickled Pheasant eggs or has anyone ever eaten them
or is this not an egg to be pickling !

Hey;MaDHaTTer.Boil some first an then eat one if it taste alright,Then you can go from there,Hope that will help you.Let me know how they come out

Well I had never heard of anyone boiling them and pickling them like you do Quail eggs or Chicken eggs !
Didn't know if any body had ever done pheasant eggs or not !
But that is pretty good Boil them 1st.

How long will pickeled eggs keep if unopened and stored in a pantry or refrigerator?

How long you can keep them depends on the method of canning. If you are just boiling the eggs and adding the pickling ingredients then the same rules apply that you would use for pickles. They tend to last a little longer than most foods just because of the pickling process but when the stuff gets cloudy I usually throw  mine out. 4 or 5 months. Of course the longer they sit the better they are. If you are using a hot bath method of canning or pressure canning then they have a shelf life of about a year. Hope this helps.  :lol:

how do you prepare the eggs for pickling,Boil&peel the shell off first

This is the one the husband and I use. Its really simple and very hot. Although you can adjust the heat by the amount of peppers you add:

24 eggs hard boiled and shelled
1 Qt. Vinegar (I mix cider vinegar and regular vinegar)
1 Qt. water
3 Tablespoons salt
1 12 oz jar hot peppers or about 12 fresh peppers (this is when it gets really hot)
2 onions cut up.

mix all ingredients and let stand several days. I do recommend using glass mason jars. They are non-reactive.
