Title: 11-07-08 Feast for the Beast, in Mankind

I started this topic yesterday, but on paper. By the time I had finished everything including eating, it was just to late to post it.

  p33 Feast for the Beast, in Mankind  p33
serving meal for 4

Smoker started @ 12:45 pm
Estimated Finish time 4:15 pm
Timer set 3.5 - 4 hrs with the first ½ hr as smoker warm up to reach 225*
I have decided for dinner tonight to do a two option dinner.

The first is a Pork Loin from Sam’s club, $1.67 lb.
The second is Venison Backstrap.
A nice 132lb., on the hoof, West Virginia White-tailed Doe  c110  on the property.

Both meats weigh in about 2.5 pounds each.

The method being used: Masterbuilt Smoker
2-cups of Mesquite wood chips
Smoker box temperature will be 225* for both being cooked at the same time. Cooking time will vary between the two meats.
2- cups of water in the water pan for extra moisture.
2- smoker racks will be used.
Top rack: Pork Loin
Bottom rack: Venison Backstrap.
Reason behind this: Pork Loins fat dripping drop to the bottom, basting the Venison Backstrap

Final (IT) Internal temperature for the Pork Loin is 170*
Final (IT) Internal temperature for the Venison BackStrap is 155*

Both the pork and venison have been tied, and each were marinated in there own special seasoning for 4 hrs prior to smoking and being refrigerated.

When they are both ready for the smoker, they will once again be rolled in their respective special seasoning and then brushed with virgin olive oil, any lightly rolled with bread crumbs.

Cool down period after smoking:
It is essential that both meats get a cool down period of 1 hour prior to serving.
Preparations for cool down:
Remove both meats from the smoker, and wrap both smoked meats separately with aluminum foil, using two cloth towels, wrap one around each, and let them cool down in the refrigerator. This is also know as the: FTC method within the smoking public. FTC stands for: Foil, Towel and Cool.

The balance of the meal consists of aluminum foil wrap Baked Potato's with Papa John’s Garlic sauce and Italian seasoning, which will be cooked in the smoker, and the mixed vegetables done on the stove, and a tossed salad.

Beverage of choice: a nice fine wine…  j41

All the prep work started @ 10 am this morning. 11-07-08 j2

Smoker started @ 12:45 pm
Estimated Finish time 4:15 pm
Timer set 4.5 hrs with the first ½ hr. as smoker warm up to reach 225*


Pork and Venison placed in smoker @ 1:15 pm
Mesquite wood chips added @ 1:30 pm
Potato’s placed in smoker @ 2:pm
Venison cooking completed @ 2:55 pm (Cook time1.5 hrs) for about 2.5 lb.
Pork cooking completed @ 4:30 pm (Cook time 3hrs 15min.)

The pork loin is now complete. Temperature 170* and will under go the same FTC as the Venison did for the cooling period.  i5

Naturally, the more common smoked Pork Loin, and its sliced pieces. Although it does have its place here within the meal.

thanks for posting that recipe sounds great, i might try to make a cake like a turkey similar to jaime7997 but mine will have the actually feather patterns and colors, instead of just the chocolate.

  little question a29 ...in thought to thanks giving.... ya'll do know the way to moist turkey breast is to cook it belly down and sealed in foil till the last 15-20 min right  ..then leave belly down when you take it out but suck out most of the drippings with the baister n leave covered  with the foil until you serve so it dont dry out ...also remember guys to cover yer biscuits with a clean kitchen towel after they come out of the oven to keep moist and fresh tasting 0009 this goes for most baked goods that way theyre not to moist ,not dry either  a31 a26

I smoke the turkey as well. I keep the water pan in the smoker filled with apple juice, and smoke with apple wood chips until the bird (IT) reaches 160* Then I'll take it out of the smoker, foil wrap and then do the oven for the balance of cooking time.

For chicken, I do it the same way, but using either Hickory or Mesquite wood chips and orange juice in the water pan. Then I will foil warp and place it on the rotisserie on The BBQ for the final cooking period. Then the cool down.

After the final cooking stage has completed, I put it in the frig with a towel wrap for the slow cool down process.

I do the Pheasants the same way as well. I will have to try birdlovers (string tied aroung the neck) culling idea. At least I won't have to throw the bird.  s020

I don't do biscuits or cookies. I still have to try birdlovers apple pie though.:?:

id love to smoke a turkey ...but in the city they call the durn fire dept on you if you try to use a smoke house  around here  s176 ...hey do it yer selfers ...any suggestions on how to build a mini smoker? i4

It is cheaper to buy one from Cabela's then it would then to make one. I have used the frozen buttermilk biscuits, many a times. That is the quick fix. s020

ill check it out thanks for now heres a recipe i took off the other forum i belong to try it and let me no if you like it ...its english mini scotch eggs
Preparation time : 20 minutes
Cooking time : 25 minutes
Total time : 45 minutes


Makes: 12
Ingredients
450g pack Waitrose Pork Sausagemeat Stuffing
15g pack fresh sage, finely chopped
120g pack Apéri Quail Hard Boiled Quail Eggs
2 tbsp plain flour
2 medium eggs, beaten
100g fresh breadcrumbs
Oil for frying, such as rapeseed oil


Method
Place the sausagemeat in a bowl with the sage and mix together with a fork. Divide the meat into 12 equal portions.
Take a piece of the sausagemeat and flatten it in the palm of your hand. Place one of the quail eggs in the centre and stretch the sausagemeat around to cover the egg completely, then roll between your hands to make an even-shaped ball. Repeat with the remaining eggs and sausagemeat to make 12 balls.
Place the flour, beaten egg and breadcrumbs in 3 separate shallow bowls. Dip each Scotch egg first in the flour to lightly coat, then in the beaten egg, and finally in the breadcrumbs. Repeat with the remaining eggs and place on a plate until ready to cook.
Heat the oil in a deep, heavy-based pan (fill to a third deep with oil) or deep fat fryer to about 160°C (or test with a cube of bread – it should go golden in about 45 seconds). Cook the eggs in several batches, about 4 at a time, for 7-9 minutes until evenly golden brown. Drain well on kitchen paper then chill in the fridge until needed.
For a picnic, leave the eggs until completely cold and wrap in greaseproof paper, to keep the breadcrumb coating crunchy. Serve with Little Gem leaves, celery sticks, baby tomatoes and tzatziki.
Cook's tips
As an alternative to deep-frying, bake the Scotch eggs in an oven preheated to 200°C, gas mark 6, for 20 minutes until golden, making sure the sausagemeat is cooked all the way through. Try making these with hard boiled hen's eggs – use a little more sausagemeat to cover each egg and increase the frying time by an extra 2-3 minutes.

sorry i just thought they sounded good my cookie recipes are easier lol ill try to put some on here ...i probably wont be on here as much as before though ....i dont think it is a good thing when something i enjoyed before leaves me in tears ...you seem really nice but some of the others.....

just thinking about the Thanksgiving menu, of course including the usual foods and a few a little different, going to be making my southern pecan pie and maybe a cranberry dessert.  Guys have you thought about what to make?, i'd love to hear your thoughts and what your menu's are, cooks can learn from each other.

You'd have to talk to my wife and her mother.  I cut wood, keep the house warm, keep the roof from leaking, and make sure she has enough money to keep food in the frig.

Sounds great patricia!! try some cornbread, baked potaotes, popovers or some kind of cranberry bread for eating with the turkey and other meats.  Is turkey the only meat your serving?  I personally just stick to tradional turkey fine by me, even if it might come out dry as long as the gravy and/or cranberry sauce is coming i'll put it to good use.

I will be smoking the turkey and spiral ham with Jack Daniels Tennessee Whiskey wood smoking chips. The wood chip come from the OLD No.7 Brand discountinued old oak barrels.

The final stage of the turkey will be finished in the oven, and the Ham will get a brown sugar glaze. If I remember, I will take some pictures and post.

im going to pleasants for dinner lol, c49 my mom cooked two turkeys at once in a slow cooker for the moose lodge lol...first  time i saw that done...oh and birdlover im going to make a ham with a pineapple glaze as well... j45

Time grows near for the up comming feast, this year my guest list is down a few from last year so there will be only 54 people here to eat dinner with the family.
 We will be serving:
 3 Turkeys each are about 13 pound birds.
1 will be traditional oven baked the other 2 shall be smoked each with different seasonings.
My husband will do the honnor of smoking the birds I know he uses Hickory and Sassafras chips and past that I'm at a loss as it has always been his job to tend the smoker.
This year at our guests request he will be smoking some 30 Quail also.
 1 large Honey glazed ham baked to perfection
 For the Beef lover in all of us we'll have Prime Rib & Fresh Horseradish
 That takes care of the choices of meat.

Brown Gravy  and Turkey Gravy

Home made dressing

 The Potato shall be mashed :NOTE: I always add Cream Cheese and Sour Cream to the mashed taters along with the butter, when using the sour cream you don't need milk or very very little milk depending on how thin you want them to be. This does make them taste GOOD!! and some Augrattin and Potato salad
Candied Sweet Potatoes with Marsh Mellows on top.

Broccoli & Cauliflower with Cheese sauce, Baked beans, Green Bean Casserole, Cole Slaw, Corn on the Cob, Buttered Baby Carrots, Shells N Cheese for the kids,
Deviled Eggs, Cranberry sauce, Marinated Cucumbers and onions, 7 cup Fruit salad, Jello salad, Beet pickles,  Relish tray,

 Fresh baked Yeast Rolls, Onion Bread, Potato Bread,

 Fresh Baked pies to include:
 Pumpkin, Sweet Potato, Lemon Meringue, Butterscotch Cream, Chocolate Cream, Mince meat, Pecan, Apple, Cherry, Blackberry Gobbler, Rhubarb Cobbler, Gooseberry Cobbler, Raspberry Cheese cake, German Chocolate Cake.
 Vanilla Ice Cream, Whipped Cream.

Sassafras Tea, Coffee, Milk, and beverages of all kinds to accommodate the meal.

  We are expecting about 54 people to be here to eat with us and usually a few will pop in unexpectedly.
 My husband and daughters will deliver at least 25 to 30 plates of food to the elderly and dissabled around our town. This is a tradition that my mother started some 50 years ago and after her passing we have continued to do it for the past 14 years.
Mother enjoyed cooking and she  always thought of those less fortunate. She would bring every one of the elderly that could get out of their homes to our house so they didn't have to spend the holidays home alone, those that couldn't get out of their homes she would deliver a complete meal with all the trimmings to them. Then for the next week she would travel around and collect her dishes and silverware.
 As the chief cook and bottle washer I am very thankfull for disposable dishes and silverware.
 Even though it was her pet peeve NOT TO SERVE FOOD ON DISPOSABLE DISHES!!!!
I think having to go back and get the dishes was her way of checking in on them and making sure they were alright.
   Enjoy the Time you have with family and friends for we are here only a short time.

awesome  dinner menu pretty bird  a29  i bet your daughters will be a big help. my daughters will too but ,we're all holding our breath to see how much longer becky will last shes already starting to dilate 1-3 wks and baby will be here..instead of dinners to the homeless we might be delivering a baby,lol a24

 As far as help from the daughters goes, HUM I have one daughter who is a baker she loves to bake and the other daughter is a photographer ( so in short I have a BAKER and a PICTURE TAKER ha ha)
The kitchen is mine but they will help with the dish up and the t transportation of the dinners to allow me time to tend the persons at the house..

By the way do you know if it's a BOY or a GIRL yet?????
 
I'm hatching baby Georgia Giants today so far about 60 have hatched and on Turkey day my other incubator will hatch..

I have to start working on getting my nuts cracked and picked out to make Christmas Candy....

Well, no fancy cakes for me this year, but thanks for the shout out with the turkey cake from last year... Got another comment on that today too... I'll be cooking this year. Turkey (marinated in a mixture of brown sugar, apple juice, & cider vinegar), baked corn, mashed potatoes, sweet potatoes, noodles, green bean casserole, cheese ball, rolls, etc.  The usual I guess. But i try to find a different recipe for at least the turkey every year. Oh, pumpkin roll. Can't forget that.
Hope everyone has a wonderful holiday. Stay warm. It's been downright cold here although "they" (whoever "they" are...) say its gonna warm up some. To at least above freezing... Bon appetit!!!

Turkey (marinated in a mixture of brown sugar, apple juice, & cider vinegar), baked corn, mashed potatoes, sweet potatoes, noodles, green bean casserole, cheese ball, rolls, etc.  The usual I guess. But i try to find a different recipe for at least the turkey every year. Oh, pumpkin roll. Can't forget that.

Gongrats on the comming new arrival!!!!
 As far as help from the daughters goes, HUM I have one daughter who is a baker she loves to bake and the other daughter is a photographer ( so in short I have a BAKER and a PICTURE TAKER ha ha)
The kitchen is mine but they will help with the dish up and the t transportation of the dinners to allow me time to tend the persons at the house..

By the way do you know if it's a BOY or a GIRL yet?????
 
I'm hatching baby Georgia Giants today so far about 60 have hatched and on Turkey day my other incubator will hatch..

I have to start working on getting my nuts cracked and picked out to make Christmas Candy....

lol now all you need is a candle stick maker ...its a boy miguel damien due 12/15 ..but i dont think shell make it we'll see ...what kind of candy? got a recipe? i hope to hatch some buttons soon...

Well, no fancy cakes for me this year, but thanks for the shout out with the turkey cake from last year... Got another comment on that today too... I'll be cooking this year. Everybody ready for thanksgiving??, i hope you all have your ingredients and ready to start cooking/baking.  Tonight i'm making my southern pecan pie, cranberry, sauce, and cranberry bread.  The other stuff i'll make tomorrow.  The only thing though is for the cranberry bread i need walnuts to mix in, would you believe i went to nearly 5 stores in NY not one store had walnuts (whats funny is that they had macadamia nuts, cashews, and these exotic nuts if you say, but they dont have walnuts....... s53 s80?  I bet you if i went down south i wouldn't of had a problem.

yeah i should but i used them in my pecan pie, i'll go to the fruit store tomorrow and get walnuts, i doubt they'll have pecans but i'll look.

If you are going to make anything Southern and it has nuts in it you always use pecans. That is all we use down here.

Hope everyone has had a good day, I know, personally, I am ready for a nap!! The apple honey turkey was good, not as good as I had hoped, but good....  I'll try something different next year. I'm stuffed to the gills, gonna crash on the couch.

:grin: thanks tweezy ..lol they look for signs of weakness, but ..they are alright guys some of them are actually really nice , i think its just ornariness mostly the still need momma ta woop em lol, had a good thanksgiving ,honey spice ham ..and ended up cooking the turkeyt in a little white grape juice marinade it was so juicy i think i can make a sooup outa the drippings alone j41 everything else was good too , but my grammy went into the hospital day before shes 86 not doing too well dont know whats wrong yet s178

I hope everyone had a good Thanksgiving :?:, i know i did.  The pecan pie came out good i just need to add a little less brown sugar next time, the turkey was moist and juicy not dried at all, i think it tasted better today, and everything else was perfect, what more can i ask for.  Don't you just love the holidays how can you go wrong with a pecan pie and other foods.
I wish thanksgiving didn't have to go so quick but then again its ok, christmas is next  p42 and this holiday is a big one.  I think i might make a turkey again for christmas day or maybe i might do a roasted pig or lamb, which are good as well.  It's good to look forward to stuff.

old post I know... You guys had me drooling back when this was posted and I have finally stepped up to your level.  Bought a 10LB Boston Pork Butt and was going to try smoking it on my charcoal grill.  Read up on how to do it on a grill since I have never smoked anything before.  We have a New Years Eve Eve party tonight with two of my sisters coming over with their husbands, so didn't want to screw it up. 

Started with a dry rub yesterday

4 TBSP Brown Sugar
4 TBSP Paprika
3 TBSP Salt
3 TBSP Black Pepper
2 TBSP Cumin
3 tsp Cayenne
2 tsp Garlic Powder
2 tsp Dry Mustard

Rubbed down the roast and wrapped it in Plastic wrap for overnight.

Went out to make sure the grill would work for this and three of the four legs fell off.  Old kettle Webber that I've had for ten years finally rusted through on the bottom.  Called my wife before she left work and told her to call me when she got to Fleet Farm .  Purchased a MasterCraft Digital Smokehouse that appears to be just like yours Steve without the Stainless.  Preseasoned her last night and fired her up this morning at 4:45 with apple juice in the water pan.  Put the roast on at 5:25 at 225F.  I've been adding apple wood chips every two hours.  Had some grease leaking out so I opened the door to check on that and misted the roast with apple juice.  Will pull it off after 6 hours and wrap it in aluminum foil, stab it with a temp probe, and back in the smoker for a few more hours.  Looks amazing.  We will also be having twice baked potatos, bourbon baked beans, and cast iron skillet corn bread.  The pulled pork will be put on toasted ciabatta buns and topped with cole slaw.  I also made three sauces for the guests, a tangy bbq, South Carolina mustard, and a black pepper vinagriette. 

I believe I will be smoking a lot of things now, looks amazing.

While I had the rub made, I rubbed down one of our free range chickens and placed that on the grill with a beer can shoved in it for one last meal for the grill.  Wow, was that amazing.  Best chicken I've ever had!

Thanks for introducing me to smoking, even if it took me awhile to get caught up!   :grin:

FYI... Here is my little helper this week.  I've got vacation all week and so does our daycare so its been her and I hanging all week.  Don't know where the last 2 1/2 years have gone.
